Description

Ingredients
- Wheat Flour - 6.7 oz
- Parmesan Cheese - 5.3 oz
- Butter - 5.3 oz
- Baking Powder - ¼ teaspoon
- Herbes de Provence - 3 teaspoons
- Paprika - 1 teaspoon
- Ground Black Pepper - ¼ teaspoon
- Salt - a pinch
- Farm fresh eggs - 2 pieces
Step by Step guide
Step 1
Take the butter out of the refrigerator in advance to soften to room temperature.
Step 2
Mix the flour with the baking powder, salt, paprika, and black pepper. Grate the Parmesan cheese on a fine grater. Combine the grated cheese with the butter until smooth.
Step 3
Now mix the flour mixture with the cheese-butter mixture. Do not knead for too long — you should just achieve a uniform dough.
Step 4
Shape the resulting dough into logs about 5 cm in diameter.
Step 5
Beat the eggs until smooth and brush the logs on all sides. Sprinkle the Herbes de Provence on plastic wrap laid out on your work surface and roll the logs in them, trying to distribute the herbs evenly. Wrap the logs in the plastic wrap and place them in the freezer for 1 hour.
Step 6
Preheat the oven to 338°F. Using a sharp thin knife, slice the logs into rounds about 1 cm thick. Place the cookies on baking sheets lined with parchment paper and brush with egg. Bake the cookies in the preheated oven for 13–18 minutes. They should be nicely browned and cooked through.
Step 7
Cool completely before serving. Store in an airtight container in a cool place.
