Description
A paraphrase of the popular cake 'Red Velvet', no magic here — the pink color of the creamy topping is achieved by adding red food coloring. Otherwise, these are lovely cupcakes with creamy frosting and a bright vanilla aroma. It's worth taking advantage of the one day a year when there’s no such thing as too much pink and posting a stunning photo on social media.
Ingredients
- Self-rising flour - ¾ cup
- Wheat Flour - 0.6 cup
- Butter - 8.5 oz
- Sugar - 1 cup
- Farm fresh eggs - 2 pieces
- Milk - ¾ cup
- Vanilla salt - 1½ teaspoons
- Red Food Coloring - to taste
- Powdered Sugar - 4 cups
Step by Step guide
Step 1
Place paper liners in a muffin tin.
Step 2
Preheat the oven to 356°F.
Step 3
In a small bowl, mix both flours. In another bowl, beat half of the softened butter and sugar until creamy. Add the eggs and beat again. Then add half of the flour, 0.5 cup of milk, and 0.5 teaspoon of vanilla. Mix well and add the remaining flour, mixing again. Fill the paper liners with the batter to ¾ full. Bake for 10–15 minutes until done, remove from the oven, and let cool.
Step 4
In a bowl, mix the remaining butter, vanilla, milk, 1 drop of food coloring, and 2 cups of powdered sugar. Beat with a mixer until creamy. Gradually add more powdered sugar to achieve a light and airy consistency. Transfer to a piping bag.
Step 5
Decorate the muffins with frosting in the shape of roses or hearts and transfer to a serving plate.
