Pastries with Custard

Ingredients

  • Wheat Flour - 8.8 oz
  • Glutinous Rice Flour - 2.1 oz
  • Butter - 4.2 oz
  • Whole egg - 1 piece
  • Powdered Sugar - 1.1 oz
  • Water - 3 tablespoons
  • Egg white - 1 piece
  • Chocolate eggs - 3 pieces
  • Milk - 12 fl oz
  • Raw cane sugar - 2.1 oz
  • Vanilla extract - 1 teaspoon
  • Nutmeg - ½ teaspoon

Step by Step guide

Step 1

Sift both flours and powdered sugar into a bowl and add the butter cut into small pieces. Mix well and add the egg yolk and ice water. Mix until smooth. Roll out the dough between 2 sheets of parchment paper. Cut out 12 circles from the dough to fit 12 muffin tins. Place the dough into the tins and press down firmly. Refrigerate for 20 minutes.

Step 2

Preheat the oven to 356°F. Place a piece of parchment paper in each tin and fill with beans or grains to prevent the dough from rising while baking. Bake in the oven for 10 minutes. Remove the paper and grains and bake for another 10 minutes until golden brown. Let cool. Brush the dough in each tin with egg white. Reduce the oven temperature to 302°F.

Step 3

Beat the eggs and milk together. Add sugar and whisk until dissolved. Add vanilla. Pour the filling into the cooled tins. Sprinkle with nutmeg and bake in the oven for 25 minutes.
