Pavlova Roll with Coffee and Hazelnuts

Ingredients

  • Egg white - 4 pieces
  • Powdered Sugar - 8.1 oz
  • Ground Cinnamon - 1 teaspoon
  • Meyer Lemon Juice - 1 teaspoon
  • Chopped almonds - 2.1 oz
  • 10% cream - 10 fl oz
  • Instant coffee - 1 teaspoon

Step by Step guide

Step 1

Line a baking sheet with parchment paper or a silicone mat. Preheat the oven to 302°F.

Step 2

Whip the egg whites until soft peaks form, add lemon juice and 90 grams of powdered sugar. Continue whipping until stiff peaks form, then gently fold in another 90 grams of powdered sugar.

Step 3

Spread the mixture on the baking sheet and smooth it to a thickness of 1 cm. Sprinkle with cinnamon, remaining powdered sugar, and nuts. Place in the oven for 20 minutes.

Step 4

Invert onto a kitchen towel and remove the paper. Leave to cool.

Step 5

Meanwhile, whip the cream with coffee dissolved in 1 teaspoon of boiling water. Spread the cream over the cake, roll it up.
