Peach semolina porridge with plum slices in syrup

Ingredients

  • Semolina - 2.8 oz
  • Milk - 9 fl oz
  • Sugar - ⅓ cup
  • Ground Cinnamon - 0.2 teaspoons
  • Grated Ginger Root - 0.2 teaspoons
  • Pea purée - 3 fl oz
  • Red Grape Juice - ½ teaspoons
  • Plums - 1 piece

Step by Step guide

Step 1

Pour 100 ml of water into a saucepan, add ¼ cup of sugar and ground cinnamon. Place over medium heat and cook until the sugar dissolves. Cut the plum in half, remove the pit, and add the halves to the boiling syrup cut side down. Add the wine and reduce the syrup over medium heat until thick and all the liquid has evaporated. Remove from heat.

Step 2

Meanwhile, in another saucepan, combine the milk, ginger, and 1 tablespoon of sugar. Place over heat, bring to a boil, and gradually sprinkle in the semolina while stirring constantly. Cook over medium heat, stirring continuously, until it thickens significantly — the porridge should turn easily with a spoon but with some effort. Remove from heat, add the peach puree, and mix. Return to heat and cook, stirring constantly, until thickened again. Remove from heat, cover, and let sit for a minute.

Step 3

Transfer the porridge to a warmed plate, top with the plum halves, and drizzle with syrup. Serve immediately.
