Peach Tiramisu
Ingredients
- Donut Peaches - 8 pieces
- Whole egg - 6 pieces
- Egg white - 4 pieces
- Powdered Sugar - 3.5 oz
- Savoiardi Cookies - 14.1 oz
- Mascarpone Cheese Unagrande - 15.9 oz
- Freshly brewed green tea - 13 fl oz
- Amaretto Liqueur - 2 spoons
- Chopped almonds - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
In a large pot, bring water to a boil and add 6 peaches for 30 seconds.
Step 3
Then transfer the peaches to an ice water bath. Once they have cooled, peel off the skins and remove the pits.
Step 4
Puree the peach flesh.
Step 5
Using a mixer, beat the egg yolks with half of the powdered sugar until they turn pale, which will take about 3-4 minutes.
Step 6
Gradually fold in the mascarpone in portions.
Step 7
In another bowl, beat the egg whites with the remaining powdered sugar until glossy and stiff peaks form.
Step 8
Gently fold the egg whites into the cheese mixture.
Step 9
Add amaretto to the cooled green tea. Dip the cookies and arrange them in a single layer at the bottom of a 20×30 cm dish.
Step 10
Spread half of the mascarpone cream over the cookies.
Step 11
Spread the peach puree on top.
Step 12
Next, place the second layer of cookies, previously dipped in tea. Cover with the remaining cream.
Step 13
Place the tiramisu in the refrigerator for 4 to 8 hours. Garnish with thinly sliced peach wedges and toasted almond flakes. Serve.
