Peaches with Raspberries in Aromatic Champagne Syrup
Ingredients
- Sugar - 0.6 cups
- Water - 1 cup
- Dry Champagne - 2 cups
- Citrus Zest Mix - 3 pieces
- Meyer Lemon Juice - 2 tablespoons
- Cinnamon - 1 piece
- Donut Peaches - 5 pieces
- Ground clove - 4 pieces
- Mint Leaves - to taste
- Raspberry leaves - 16.6 oz
Step by Step guide
Step 1
In a saucepan over medium heat, combine sugar, champagne, water, pieces of lemon zest, lemon juice, cloves, and cinnamon. Bring to a boil, reduce heat, and simmer for about 6 minutes until the sugar dissolves.
Step 2
Meanwhile, peel the peaches and remove the pits, then slice them thinly.
Step 3
Place the peaches in the syrup, bring to a boil, and remove from heat. Let cool for 30 minutes.
Step 4
Using a slotted spoon, distribute the peaches into dessert bowls.
Step 5
Return the remaining syrup to the heat and simmer until thickened, about 8 minutes. Cool. Strain and drizzle over the peaches.
Step 6
Refrigerate for 30 minutes.
Step 7
Top with raspberries and garnish with mint leaves.
