Ingredients
- Salt - a pinch
- Wheat Flour - 14.1 oz
- Whole egg - 2 pieces
- Water - 2 tablespoons
- Chopped almonds - 14.1 oz
- Butter - 4.4 oz
- Sugar - 7.1 oz
- Farm fresh eggs - 3 pieces
- Anjou Pear - 3 pieces
Step by Step guide
Step 1
Prepare the dough. To do this, beat 125 grams of butter with 200 grams of sugar, add sifted flour, salt, egg yolks, and water. Knead the dough, wrap it in foil, and place it in the refrigerator for 1 hour. Preheat the oven to 392°F, spread the dough in the tart pan, and bake for 10 minutes.
Step 2
Blanch the almonds and remove the skins. Dry them. Grind in a coffee grinder or food processor to a powder. Add butter, sugar, eggs, and beat until smooth. Refrigerate for 15 minutes.
Step 3
Preheat the oven to 356°F. Spread the filling on the cooled dough and press pieces of pear into the almond mixture (each pear should be peeled and cut into large slices, removing the cores). Place the tart in the center of the oven and bake for 30 minutes, until the edges of the dough are golden brown. Cool and serve with vanilla ice cream.
