Pear-Cranberry Pie with Cream Glaze

Ingredients

  • Wheat Flour - 3 cups
  • Baking Powder - 1 tablespoon
  • Salt - 1 teaspoon
  • Ground Cinnamon - 1 teaspoon
  • Spices - ½ teaspoon
  • Ground Nutmeg - ½ teaspoon
  • Sugar - 1¾ cups
  • Farm fresh eggs - 4 pieces
  • Vegetable Oil - 1¼ cups
  • Vanilla extract - 1¼ tablespoons
  • Pears - 24.7 oz
  • Dried cranberries with sugar - 1 cup
  • 33% Cream - 1 cup
  • Brown Sugar - ½ cup
  • Light Corn Syrup - 1 tablespoon
  • Cinnamon - 2 pieces

Step by Step guide

Step 1

Leave in the pan for 30 minutes, transfer to a plate, and cool.

Step 2

In a saucepan, pour in the cream and add brown sugar, corn syrup, vanilla, cinnamon sticks, and a pinch of salt. Bring to a boil, stirring constantly, and cook for about 10 minutes until slightly thickened. Cool for 5 minutes, remove the cinnamon, and pour over the pie.

Step 3

Preheat the oven to 356°F. Grease a round pie pan, preferably with a hole in the middle.

Step 4

Mix the flour, baking powder, salt, and spices. In another bowl, beat the sugar, oil, eggs, and 1 tablespoon of vanilla with a mixer. Reduce the mixer speed and add the chopped pears and cranberries, then gradually incorporate the flour. Pour the batter into the pan and bake until done for 1 to 1.5 hours.
