Pear Dessert with Blueberries and Ice Cream
Ingredients
- Fresh Berries - 10.6 oz
- Lemon - 1 piece
- Vanilla Ice Cream - 2 lbs
- Pears - 17.6 oz
- Sugar - 2.8 oz
- Liqueur - 1 fl oz
- Vanilla salt - 1.1 oz
- Cream - 8 fl oz
- Biscoff Cookie Butter - 8.8 oz
- Pistachios - 3 tablespoons
Step by Step guide
Step 1
Slightly thaw the ice cream at room temperature.
Step 2
Rinse the blueberries and dry them.
Step 3
Peel the pears and remove the seeds, puree the flesh in a blender with lemon juice, sugar, and pear liqueur. Cover and let it sit for a few minutes to dissolve the sugar.
Step 4
Whip half of the cream with 1/2 packet of vanilla sugar until stiff peaks form.
Step 5
Combine the softened ice cream with the pear puree and gently fold in the whipped cream.
Step 6
Line a mold with foil and arrange a layer of butter cookies in it. Cover with a layer of cream-pear ice cream, then add the blueberries, followed by another layer of ice cream and a layer of butter cookies. Repeat the layers with all components and place the dessert in the freezer to set.
Step 7
Before serving, sprinkle the dessert with chopped pistachios.
