- Lemon - 1 piece
- Sugar - 0.5 oz
- Cinnamon - 1 piece
- Pears - 2 pieces
- Chocolate - 3.5 oz
- 10% cream - 7 fl oz
- Brandy - 0 fl oz
- Vanilla Ice Cream - 1.8 oz
Step by Step guide
Step 1
Remove the zest from the lemon in thin strips.
Step 2
Squeeze the juice from the lemon into a saucepan. Add the zest, 2/3 cup of water, sugar, and cinnamon. Bring to a boil.
Step 3
Peel the pears, leaving the stem intact, and cut them in half. Carefully remove the core with the seeds.
Step 4
Place the pears in the hot syrup and cook for 8–12 minutes. The pears should become soft but not mushy.
Step 5
Cool the pears completely in the syrup.
Step 6
Melt the dark chocolate (60% cocoa) in the cream, stirring constantly. This can be done in a double boiler or over low heat.
Step 7
Add the warmed brandy to the hot chocolate and mix.
Step 8
Place a pear on a plate, add a scoop of ice cream in the center, and drizzle with hot chocolate.
