- Star anise - 2 pieces
- Pears - 6 pieces
- Non-alcoholic sparkling wine - 25 fl oz
- Sugar - 3.5 oz
- Vanilla salt - 1 piece
- Cinnamon - 1 piece
- Vanilla Ice Cream - 2 lbs
Step by Step guide
Step 1
Peel the pears, leaving the stems intact. This step doesn't have any particular purpose, except that it's believed the pears look more appealing with the stems.
Step 2
Pour sparkling semi-sweet Lambrusco wine into a shallow pot, then split a vanilla pod in half and scrape the seeds into the pot with a knife. Also add the empty pod to the pot. Add sugar, cinnamon, and star anise to the same pot, and wait for the wine to come to a boil before adding the pears. The wine will calm down for a moment, and then it will start boiling vigorously again. At that point, reduce the heat to the minimum so that the contents of the pot simmer gently. Leave the pot in this state for one hour and fifty minutes.
Step 3
Then, remove the pears with a slotted spoon and set them aside to cool. Reduce the remaining wine in the pot until it thickens slightly. This will be the sauce.
Step 4
Serve the pears by cutting off the bottoms so they can stand upright on the plate — it is believed that this makes the pears look more attractive — drizzled with sauce and accompanied by ice cream.
