Pear Jam with Lemon
Ingredients
- Pears - 2 lbs
- Sugar - 2 lbs
- Lemon - 1 piece
- Water - 8 fl oz

Step 1
Wash the lemon and cut it into thin slices, discarding the seeds.
Step 2
Pour 240 ml of water over the lemon, bring to a boil, and simmer for 5 minutes.
Step 3
Strain the broth through a sieve, discarding the lemon - it has given its acidity.
Step 4
Add the sugar, stir, and place on the heat. Cook until the mixture turns into syrup - the sugar should completely dissolve, with no granules remaining.
Step 5
Remove the cores from the pears and slice them thinly.
Step 6
Add the pears to the syrup, bring to a boil, and simmer for 5 minutes. Then remove from heat and let the jam cool completely.
Step 7
When the jam has cooled, place it back on the heat and cook for another 20-30 minutes. To check if the jam is ready, scoop a teaspoon of syrup, cool it, and drop it onto a saucer - if the drop spreads, the jam is not ready; if the drop holds its shape, it can be removed from the heat.
