Ingredients
- Pears - 4 lbs
- Sugar - 4 lbs
- Cardamom - 3 pieces
- Dried Chili Pepper - ⅓ pieces
- Lavender flowers - 1 tablespoon
- Citrus Zest Mix - 2 spoons
Step by Step guide
Step 1
Wash the pears, use a thin sharp knife to peel them, cut the fruits in half and remove the cores. Slice the cleaned halves in your preferred way.
Step 2
In a bowl, combine the fruits with sugar, lemon zest, crushed (not powdered) chili, crushed cardamom seeds, and lavender. Shake the bowl well and set it aside for a while. In an hour, the pear can release a lot of juice. Check it!
Step 3
When the sugar has almost completely absorbed the juice, shake it gently and place the pot over low heat, waiting for it to come to a boil. Skim the foam to the center and remove it. If the syrup has increased in volume by about two times, use a slotted spoon to take out the pear pieces and gently transfer them to a clean container. Continue to reduce the syrup over low heat. As soon as it thickens, return the pear pieces to the pot, skim off any foam, and check the consistency with a drop.
Step 4
If the lentils didn't turn out right the first time, give it another try, cool them down, and then jar them.
