Pear Pie with Salted Caramel

Ingredients

  • Chicken Egg - 1 piece
  • Sugar - 12.3 oz
  • Vanilla Essence - ½ ml
  • Sour cream 20% - 1.8 oz
  • Milk - 1 fl oz
  • Vegetable Oil - 1 fl oz
  • Butter - 1.2 oz
  • Wheat Flour - 3.2 oz
  • Baking Powder - 0.2 oz
  • Orange zest - 1.8 oz
  • Starch - 0.1 oz
  • Salt - to taste
  • Pears - 21.2 oz
  • Cream - 8 fl oz
  • Ice Cream - 14.1 oz

Step by Step guide

Step 1

For the dough, rub one egg with a tablespoon of sugar, add butter, sour cream, milk, salt, flour, vanilla essence, starch, and orange zest. Knead the dough and refrigerate for 30 minutes.

Step 2

Peel the pears, cut them in half, and remove the core. Chop them randomly.

Step 3

Take the dough out of the refrigerator and mix it with the pears.

Step 4

Pour the pear mixture into a baking dish and bake at 356°F for 30 minutes.

Step 5

To make the salted caramel, take two pots, placing one on low heat. Pour in the cream and let it warm slowly.

Step 6

Place the other pot on medium heat. Add the sugar and 2 tablespoons of water. Keep on the heat for 5 minutes — the sugar will dissolve and turn the color of cognac. Do not stir, but occasionally swirl the pot or tilt it slightly in different directions.

Step 7

When the cream is hot, add it to the cognac-colored sugar. Stir for 1 minute. Add half the salt and stir for 3 minutes. Taste the caramel, and if desired, add more salt.

Step 8

Place the hot pie on a plate and drizzle with 50 ml of caramel sauce, placing a scoop of ice cream next to it.
