Ingredients
- Wheat Flour - 5.3 oz
- Pears - 2 lbs
- Butter - 7.1 oz
- Lemon - 1 piece
- Sugar - 6.2 oz
- Salt - a pinch
Step by Step guide
Step 1
Mix the flour and salt, then rub half of the butter into the flour with your fingertips. Sprinkle in three tablespoons of ice-cold water and knead until a smooth dough forms. Wrap the dough in plastic wrap and place it in the refrigerator.
Step 2
Peel the pears, cut them in half, and remove the core.
Step 3
Melt the remaining butter over medium heat. Add the sugar and sauté, stirring, until it caramelizes. Remove from heat and let it cool; the sugar will continue to darken even after being taken off the heat.
Step 4
Place the pears in a saucepan with caramelized sugar, rounded side down, and simmer for ten minutes.
Step 5
Roll out the dough on a floured surface and cut out a circle larger than the baking dish. Arrange the pears cut side up, cover with the dough, and tuck the edges inward. Bake for twenty-five minutes in the oven at 410°F.
Step 6
Remove the tart from the oven, drain any excess juice, invert it onto a plate, and let it cool.
