Ingredients
- Pears - 12.3 oz
- Strawberry - 1.5 oz
- Gelatin - 0.5 oz
- Raspberry leaves - 1.5 oz
- Sugar - 3.7 oz
- Water - 16 fl oz
- Fresh Berries - 1.1 oz
- Oranges - 1.5 oz
- Mint - 0.2 oz
- Basil - 0.2 oz
- Orange juice concentrate - 1 fl oz
- Corn Starch - 0.1 oz
Step by Step guide
Step 1
Boil the pears in water with sugar, peel them, and cut into pieces, then place everything in a blender.
Step 2
Blend the pears until smooth.
Step 3
Soak the gelatin in cold water, add it to the pear syrup. Then slightly heat the mixture without bringing it to a boil.
Step 4
Wash and chop the mint and basil.
Step 5
Wash the berries. Cut the strawberries into 6 or 8 pieces depending on their size, and cut the raspberries in half. Wash and peel the orange, separating it into segments.
Step 6
Arrange the fruits in a mold, pour in the first layer of jelly, and chill for 15-20 minutes, then remove the mold and repeat the process. Repeat 2 times for 2 layers if using portion molds, or 4-5 layers for a large mold.
Step 7
Wash and squeeze the orange, mix with sugar and cornstarch that have been soaked in a small amount of water.
Step 8
Before serving, remove the terrine from the mold if it hasn't been portioned beforehand, and cut with a warm knife.
