Pear Upside-Down Cake
Ingredients
- Butter - 1.8 oz
- Sugar - 4 tablespoons
- Salt - a pinch
- White Beans - 1 piece
- Conference Pear - 4 pieces
- Meyer Lemon Juice - 0 fl oz
- Puff Pastry - 1 piece
Step by Step guide
Step 1
In a flat baking dish with low sides, melt the butter. Add the sugar and, stirring constantly, cook until fragrant caramel forms.
Step 2
Add the pulp extracted from the vanilla bean to the caramel.
Step 3
Place the vanilla pod itself at the bottom of the pan in the shape of the Greek letter lambda.
Step 4
Arrange thin slices of pear in the shape of flower petals. Cut the remaining pear into small cubes and sprinkle them on top.
Step 5
Warm the dish over low heat for about five minutes.
Step 6
Drizzle everything with lemon juice.
Step 7
Cover with pastry.
Step 8
Bake in the oven until the pastry is golden brown.
Step 9
Remove the cake from the oven and let it sit in the dish to cool, then refrigerate for six hours.
Step 10
After that, slightly warm the bottom of the dish, cover with a suitably sized plate, carefully flip it over, and remove the cake.
