Description

Ingredients

  • Star anise - 1 piece
  • Pears - 1 piece
  • Red Grape Juice - 17 fl oz
  • Sugar - 5.6 oz
  • Ginger - 0.1 oz
  • Clove - 1 piece
  • Green peppercorns - 4 pieces
  • Chinese Five Spice - 0.2 oz
  • Whole egg - 1 piece
  • Puff Pastry - ½ pieces
  • Butter - 0.2 oz
  • Vanilla Ice Cream - 2.8 oz

Step by Step guide

Step 1

Peel the pear, cut it in half, remove the core, and place it in a bag. Dissolve 150 grams of sugar in the wine, pour it over the pear, add the spices, and vacuum seal the bag.

Step 2

Heat the water to 167°F and immerse the bag with the pear for three hours.

Step 3

Roll out the dough slightly and cut it into two rectangles approximately 15x20 cm. Line a baking tray with parchment paper, place the dough on it, lightly beat the egg yolk, and brush it over the dough, leaving the center uncoated. Make light cuts in the dough about a centimeter from the edges, so that the center can be easily removed later, then place it in a preheated oven at 356°F for twenty minutes. When the dough rises and turns golden brown, take it out of the oven and carefully remove the rectangular centers.

Step 4

Place the wine used to cook the pears over heat and reduce it until it reaches a syrupy consistency. Towards the end, stir in 5 grams of butter into the sauce.

Step 5

Sprinkle the prepared pears with sugar and place them on the top rack of a preheated oven at 482°F for three minutes. Alternatively, you can sprinkle the fruits with sugar and caramelize them with a torch, if available.

Step 6

Serve the pears on puff pastry with a wine sauce and ice cream.
