Ingredients

  • Pears - 4 lbs
  • Sugar - 3.5 oz
  • Rosemary - 4 stalks
  • Butter - 2.6 oz
  • Grated Pecorino Pepato Cheese - 5.3 oz
  • Almond Candy Coating - 3.5 oz
  • Ocean salt - to taste

Step by Step guide

Step 1

Peel the pears and cut each one lengthwise into four pieces. Heat a large skillet, add sprigs of rosemary, sprinkle in the sugar, and splash in a little water; cook without stirring until the sugar turns into caramel. Then add the butter to the caramel, stir, and add the pears. Reduce the heat and cook the pears in the caramel for ten minutes, turning them occasionally.

Step 2

After that, chill it, and before serving, sprinkle with grated Parmesan cheese, ground nuts, and salt.
