Ingredients
- Star anise - 2 pieces
- Water - 20 fl oz
- Sake - 8 tablespoons
- Sugar - 7.9 oz
- Cinnamon - 1 piece
- Lime - 2 pieces
- Asian Pear - 2 pieces
- Butter - 1.8 oz
- Cream - 5 fl oz
- Liquid dark chocolate - 2.6 oz
Step by Step guide
Step 1
In a pot, pour in the water and sake, add the star anise, cinnamon, juice and zest of 1 lime, and bring to a boil. Simmer for 5 minutes, then reduce the heat. Add the peeled whole pears, cover, and stew for 45 minutes until tender. Remove from heat and let cool in the syrup.
Step 2
For the sauce, melt the chocolate and mix it with the cream and butter. Add the zest of the second lime and mix well.
Step 3
Before serving, cut the pears in half and scoop out the core. Place in 2 serving bowls and drizzle with the chocolate sauce.
