Pecan and Cranberry Bread
Ingredients
- Unbleached flour crackers - 10.6 oz
- Wheat Flour - 7.1 oz
- Salt - to taste
- Water - 12 fl oz
- Pecan - 3.5 oz
- Dried cranberries with sugar - 3.5 oz
- Dry yeast - 0.4 oz
- Oranges - 1 piece
Step by Step guide
Step 1
Chop the nuts and mix them with cranberries and orange zest.
Step 2
Combine both types of flour, rub in the yeast until it forms fine crumbs. Add salt, water, the nut and berry mixture, and knead the dough. Form the dough into a ball, cover it, and let it rest for 45 minutes.
Step 3
Place the dough on a surface, divide it into 2 parts, and let it rest for another 5 minutes.
Step 4
On a floured surface, shape the dough into 2 loaves. Place them seam side down on a baking sheet lined with a towel and dusted with flour, and let them rise for 1 hour.
Step 5
Preheat the oven to 482°F.
Step 6
Transfer the loaves to an inverted baking sheet and make a crosswise slash with a sharp knife.
Step 7
Spray the oven walls with water from a spray bottle, reduce the temperature to 428°F, place the loaves inside, and bake for 5 minutes.
Step 8
Lower the temperature to 392°F and bake for another 30–35 minutes.
