Description
The cheese made using this recipe is tender and delicious — just as good as store-bought, but without unnecessary additives and much more cost-effective. It can be stored in the refrigerator for up to 5 days.
Ingredients
- Kefir - 1 qt
- Herbes de Provence - 2 teaspoons
- Nutmeg - a pinch
- Ground Black Pepper - to taste
- Ocean salt - to taste
Step by Step guide
Step 1
Freeze the kefir for at least 10 hours.
Step 2
Prepare a colander, sieve, or strainer for it.
Step 3
Line it with several layers of cheesecloth.
Step 4
Open the package and transfer the frozen kefir onto the cheesecloth. If this step seems difficult, you can pour the kefir into a bag before freezing.
Step 5
Once the kefir is completely thawed, squeeze out the remaining whey through the cheesecloth.
Step 6
Grind the salt to a powder in a coffee grinder.
Step 7
Transfer the resulting cheese to a convenient container and season with the powdered salt. Mix and taste. Add more salt if necessary.
Step 8
Soak the Provencal herbs in warm water to soften them. Leave for 10 minutes.
Step 9
Drain the water and add the herbs to the cheese.
Step 10
Add ground black pepper and nutmeg. Mix well.
Step 11
Transfer to a suitable storage container.
