Phyllo Dough Cups with Raspberries
Ingredients
- Frozen Raspberries - 24.7 oz
- Sugar - ½ cup
- Orange juice concentrate - 0.3 cups
- Salt - 0.1 teaspoons
- Corn Starch - 2 tablespoons
- Water - 2 tablespoons
- Butter - 1½ tablespoons
- Vanilla extract - ½ teaspoons
- Phyllo Dough - 42 pieces
- Cream (40%) - 1¼ cups
- Raspberry leaves - to taste
Step by Step guide
Step 1
In a saucepan, combine the thawed raspberries, sugar, orange juice, and salt. Bring to a boil, reduce heat, and simmer for 5 minutes without covering. Transfer to a sieve and squeeze out all the juice.
Step 2
Pour the juice into a pot. In a small bowl, mix the cornstarch and water, then pour the mixture into the berry juice. Bring to a boil over medium heat and cook for 1 minute. Remove from heat and add the butter and vanilla. Stir well and let cool slightly.
Step 3
In each thawed phyllo cup, place a small amount of the raspberry mixture and chill for 2 hours.
Step 4
Whip the cream and decorate the cups. Top with fresh raspberries.
