Ingredients
- Watermelon - 17.6 oz
- Coarse Salt - to taste
- Apple Cider Vinegar - 1½ cups
- Sugar - 1½ cups
- Pickles - 2 tablespoons
Step by Step guide
Step 1
Using a sharp knife or a vegetable peeler, cut off the dark green skin from the watermelon. Cut the remaining green part into strips about 5x1 cm.
Step 2
In a small saucepan, combine 5 cups of water and 3 tablespoons of salt. Bring to a boil and add the cut rinds. Cook over medium heat for about 5 minutes, until the rinds are soft but still slightly crunchy inside. Drain and transfer to a bowl.
Step 3
In the saucepan, mix the vinegar, sugar, spices, 1 teaspoon of salt, and 1 cup of water. Bring to a boil, stirring until the sugar dissolves.
Step 4
Pour the marinade over the rinds in the bowl, stir, and press down with a plate. Let cool to room temperature.
Step 5
Transfer to a container, cover with a lid, and refrigerate for a couple of hours.
