Description

Recipe from the book 'What Parisians Eat' by Anne Martin.

Ingredients

  • Wheat Flour - 14.1 oz
  • Butter - 7.1 oz
  • Whole egg - 4 pieces
  • Heavy cream - 5 fl oz
  • Sugar - 1.8 oz
  • Vanilla Pod - 1 piece
  • Dry yeast - ¼ pieces

Step by Step guide

Step 1

The day before, prepare the starter. Pour 150 ml of warm water into a bowl and dissolve the yeast in it. Once the yeast has dissolved, add 250 g of flour and 2 tablespoons of cream.

Step 2

Stir the starter with a fork, cover the bowl with a napkin, and let it sit until tomorrow. Split the vanilla pod lengthwise and place it in the sugar, which should be transferred to an airtight container.

Step 3

The starter should nearly double in volume by the next day. In another bowl, combine the flour and vanilla sugar. Add 100 g of melted butter and the egg yolks, and mix with a fork. Pour in the remaining cream and the starter.

Step 4

Preheat the oven to 220 °C (428 °F). Grease a deep baking dish with butter, place the dough in it, and bake for 45 minutes. After about 20-25 minutes, reduce the heat to 180 °C (356 °F).

Step 5

Remove the pie from the mold, cut it into two layers, and spread the remaining butter on the bottom layer. Cover it with the top layer and return it to the oven for another 10 minutes. This pie tastes best when served hot.
