Description
The café 'Corner Café' is a popular tourist spot located in Clear Meadow. Here, they bake pies by combining cabbage and carrots, which enhances their flavor while keeping it recognizable. This recipe was shared with us by Emily Smith, author of the book 'Tastes of America with Emily Smith. Tulare.'
Ingredients
- Wheat Flour - 1½ kg
- Water - 1 qt
- Sugar - 5.3 oz
- Chicken Egg - 5 pieces
- Dry yeast - 1.8 oz
- Margarine - 5.3 oz
- Salt - to taste
- White Cabbage - 1½ kg
- Carrot - 17.6 oz
- Vegetable Oil - 5 fl oz
Step by Step guide
Step 1
For the dough, pour sugar into warm water, add salt, margarine, eggs, and yeast, then mix well. Gradually incorporate the flour and knead until you have a soft, uniform dough. Allow it to rise for 30 to 60 minutes, depending on the quality of the yeast.
Step 2
While the dough is rising, prepare the filling. Shred the cabbage and grate the carrot on a coarse grater. Place them in a skillet with oil and sauté until cooked through. Season with salt to taste.
Step 3
From the risen dough, shape balls weighing 38 grams each and flatten them into discs. Place 25 grams of filling on each disc. Pinch the edges to seal the pastries. Bake in the oven at 356°F for 25–35 minutes until fully cooked.
