Ingredients
- Wheat Flour - 3 cups
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Vegetable Oil - 4 tablespoons
- Tomatoes - 5 pieces
- Cottage cheese - 7.1 oz
- Goat cheese - to taste
- Herbs - to taste
- Garlic - 2 cloves
- Water - 1 cup

Step 1
For the dough, dissolve the sugar, salt, and oil in a glass of hot water, then pour it into the flour (I used a mix of wheat and buckwheat flour — the pies turned out a bit dark), and knead the dough. Set it aside to rest.
Step 2
For the filling, cut the tomatoes into thick rings. Mix the cottage cheese (add salt), goat cheese, and chopped herbs (I used basil, lemon thyme, and a bit of rosemary) in a bowl, and press the garlic through a garlic press into the mixture.
Step 3
Divide the dough into two parts (one slightly larger than the other), roll both out fairly thinly, place the tomatoes on the smaller piece (at least 3 cm apart), put a little filling on each circle (I topped it with grated hard cheese — I used 'Comté'), and cover with the larger piece. Use a glass of suitable diameter to cut out our tomato pies. Fry them in oil in a skillet. Serve hot.
