Pina Colada Muffins
Ingredients
- Wheat Flour - 7.4 oz
- Sugar - ¾ cup
- Baking Powder - 1 teaspoon
- Salt - ⅓ teaspoon
- Egg white - 1 piece
- Activated Baking Soda - ½ teaspoon
- Butter - 1.8 oz
- Sour Cream - 7.1 oz
- Dark rum - 1 tablespoon
- Canned Pineapple Chunks - 3 pieces
- Pineapple - ½ cup
- Desiccated coconut - ½ cup
Step by Step guide
Step 1
Mix all the wet ingredients: sour cream, rum, pineapple syrup, egg, and melted butter.
Step 2
Mix the dry ingredients: flour, sugar, baking powder, baking soda (be sure to neutralize it to avoid a baking soda taste), and salt.
Step 3
Combine the dry and wet ingredients. Do not mix for too long, just enough to combine into a uniform structure.
Step 4
Add the pineapple. Add the shredded coconut and mix.
Step 5
Spoon the batter into muffin cups (I used silicone ones), sprinkle with shredded coconut on top, and bake in a preheated oven for 30–35 minutes at 356°F.
