Description

Pineapple Cake (Martinique)

Ingredients

  • Canned Pineapple Chunks - 17.6 oz
  • Egg white - 4 pieces
  • Sugar - 13.2 oz
  • Butter - 5.3 oz
  • Rum - 3 tablespoons
  • Lemon - 1 piece
  • Wheat Flour - 8.8 oz
  • Dry yeast - 0.4 oz
  • Water - 4 tablespoons

Step by Step guide

Step 1

Remove the canned pineapples from the can and let them drain, but keep the juice as we will need it later.

Step 2

Prepare caramel from water and sugar and pour it into a non-stick baking dish with high sides, where we will bake our cake. It is important to cover the entire bottom of the dish.

Step 3

Preheat the oven to 356°F.

Step 4

Now place the pineapples on the caramel in the dish so that they cover the entire bottom. Blend the remaining pineapples with a mixer or chop them into small pieces.

Step 5

Beat the eggs with sugar until a frothy mixture forms. Take the butter (softened, not frozen), chop it into cubes, and add it to our egg mixture with sugar. Add flour, rum, lemon juice, yeast, and the pineapple puree or cubes. Mix everything well and pour it into the dish with the pineapples and caramel. Bake in the oven for 40–50 minutes.

Step 6

Let the cake cool. To give it a melting taste, drizzle a little rum and pineapple juice on top.
