Pineapple Coconut Cookies

Ingredients

  • Canned Pineapple Chunks - 20.1 oz
  • Sugar - 1 cup
  • Desiccated coconut - 3½ cups
  • Egg white - 3 pieces
  • Vanilla extract - ½ teaspoon

Step by Step guide

Step 1

In a large skillet (preferably non-stick), combine the crushed pineapple with juice and sugar over medium heat until the liquid evaporates. Then, keep it on the heat, stirring constantly, until the pineapple turns brown and reaches a sticky consistency (about 15–20 minutes).

Step 2

Mix the shredded coconut and the prepared pineapple in a bowl. Add the egg whites and vanilla extract. Stir well.

Step 3

Preheat the oven to 356°F (350 degrees Fahrenheit). Line a baking sheet with parchment paper or use a silicone baking mat.

Step 4

Form the dough into balls about 3–4 cm in diameter.

Step 5

Place the cookies on the baking sheet and bake for about 20–25 minutes.
