Pineapple Cookies

Ingredients

  • Canned Pineapple Chunks - 8.1 oz
  • Sugar - ¾ cup
  • Wheat Flour - ¾ cup
  • Farm fresh eggs - 2 pieces
  • Baking Powder - ½ teaspoon
  • Salt - to taste
  • Brown Sugar - ½ cup
  • Ground Oats - 1 cup
  • Margarine - 3.5 oz
  • Chopped almonds - 2.8 oz

Step by Step guide

Step 1

Place the pineapple with juice in a pot, mix with ¼ cup of sugar and 1 tablespoon of flour. Cook until the mixture thickens and becomes transparent.

Step 2

Lightly beat 1 egg, gradually add the hot mixture, and cook, stirring, for another 2 minutes.

Step 3

Mix ¾ cup of flour with baking powder, salt, oats, brown sugar, and ¼ cup of melted margarine. Spread into a greased square baking dish with sides of 20 cm and flatten, pressing down lightly.

Step 4

Bake for 10 minutes at 190°C (375°F).

Step 5

Combine the remaining ¼ cup of melted margarine with the egg and ½ cup of sugar.

Step 6

Add the almonds. Spread the pineapple filling over the baked base, then top with the almond mixture.

Step 7

Bake at 190°C (375°F) for another 30 minutes. Cut the cooled base into diamond shapes.
