- Light Molasses - 0.5 oz
- 3.2% Milk - 5 fl oz
- Butter - 0.5 oz
- Curry - 2 teaspoons
- Wheat Flour - 1.4 oz
- Banana puree - 3.5 oz
- Pineapple - 3.5 oz
- Cilantro - 0.2 oz
- Gelatin - 0.7 oz
- Ground coriander - 0.2 oz
- Whole egg - 1.8 oz
- Whipped Cream - 3 fl oz
- Pistachios - 0.4 oz
Step by Step guide
Step 1
Curry Biscuit. Whisk together the egg (60 g), sugar (15 g), and molasses. Combine the flour with curry and mix by hand, then add warm milk (15 g) and butter. Bake at 338°F for 7–10 minutes.
Step 2
Pineapple-Cilantro Jam. Cut the pineapple into small cubes and cook them with the pineapple puree. Add gelatin (10 g) and finely chopped cilantro.
Step 3
In a heart-shaped mold, layer the curry biscuit, pineapple-cilantro jam, and pistachio-coriander mousse alternately. Freeze. Cover with glaze. Decorate with a marzipan heart.
