Description
Most of the Demerara sugar is now produced not in Latin America, but on the island of Mauritius. And wherever this sugar is available, fruit dishes are prepared specifically with it.
Ingredients
- Pineapple - 21.2 oz
- Demerara Sugar - 1.8 oz
- Meyer Lemon Juice - 1 fl oz
- Cardamom - 4 pieces
Step by Step guide
Step 1
Peel the pineapple, slice it into rings, and use a knife to remove the core.
Step 2
Preheat a grill pan until it starts to smoke lightly, then grill the pineapple slices for about two to three minutes on each side.
Step 3
In a regular frying pan, add demerara sugar and place it over the heat. Gradually, the sugar will melt from the heat and turn into a boiling brown liquid.
Step 4
Pour lemon juice into the skillet, add the crushed cardamom pods, and cook the caramel for another two to three minutes. Then, add the pineapple slices and simmer them in the caramel for two minutes on each side before serving.
