  • Egg white - 5 pieces
  • Butter - 15.9 oz
  • Red Food Coloring - to taste

In a water bath, whisk together the sugar, egg whites, and salt until the sugar dissolves and the syrup reaches 158°F.

Step 2

Transfer to a bowl and beat with a mixer on medium speed for 5 minutes. Increase the speed and continue beating for another 6 minutes until thick and frothy.

Step 3

Reduce the speed again and gradually add the softened butter while whisking. Then add a few drops of food coloring until you reach your desired color.
