Description
These pirozhki can be made either fried or baked.
Ingredients
- Ryzhenka - 10 fl oz
- Chicken Egg - 2 pieces
- Onion - 1 piece
- Lamb stomach - 7.1 oz
- Vegetable Oil - 2 cups
- Wheat Flour - 17.6 oz
- Clarified Butter - 2 tablespoons
- Sugar - ½ tablespoon
- Chicken offal - 3.5 oz
- Dry yeast - 0.2 oz
- Activated Baking Soda - ½ teaspoon
Step by Step guide
Step 1
Dissolve the yeast in warm boiled water, add ryazhenka, eggs, melted butter, sugar, and salt. Mix everything well.
Step 2
Sift the flour through a sieve, adding it gradually, knead a soft, elastic dough that slightly sticks to your hands (the amount of flour may vary depending on its density). Shape the dough into a ball, place it in a bowl, cover with plastic wrap, and put it in a warm place to rise. During this time, punch down the dough once or twice.
Step 3
While the dough is rising, prepare the filling. For this, pass the onion, lungs, and offal through a meat grinder, season with salt, and sauté in vegetable oil.
Step 4
Puree with a blender.
Step 5
When the dough has risen, place it on a floured surface and roll it into a rope, cut into pieces, lightly dust with flour, roll into a flat cake, add the filling, and pinch the edges.
Step 6
Cover with a towel and let it rest for 15 minutes.
Step 7
Heat a frying pan. Pour in vegetable oil. Fry over medium heat until golden brown.
