- Ground Almonds - 2.5 oz
- Wheat Flour - 2.5 oz
- Unsalted peanuts, shelled - 2.5 oz
- Egg white - 6 pieces
- Butter - 4.2 oz
- Orange Blossom Water - 2 spoons
- Sugar - 4.2 oz
- Cherry - 10 pieces
Step by Step guide
Step 1
Preheat the oven to 320°F. In a large bowl, combine the ground almonds and pistachios, then add the flour and sugar, and whisk together. Next, incorporate the melted butter and orange blossom water into this mixture. In a separate bowl, use a hand whisk to beat the egg whites until soft peaks form. Gently fold the egg whites into the flour mixture using a spatula.
Step 2
Fill half of the volume of financier baking molds (or, if unavailable, muffin cups will work) with the prepared batter, and place half a cherry in the center of each. Then, evenly cover the top with the remaining batter, ensuring that the berries are nestled in the middle of each pastry.
Step 3
Place the molds in the oven and bake for fifteen to twenty minutes until golden brown. Then remove and let cool.
