Description

- Plums - 2 lbs
- Raw cane sugar - 2 lbs
- Meyer Lemon Juice - 4 fl oz
- Star anise - 3 pieces
- Grated Ginger Root - 1 teaspoon
Step by Step guide
Step 1
In a pot, place the quartered plums, sugar, lemon juice, 125 ml of water, star anise, and ginger.
Step 2
Bring to a boil, stirring until the sugar dissolves. Reduce the heat to medium and cook for 35–40 minutes, stirring occasionally.
Step 3
Place a plate in the freezer and check the readiness of the jam by dropping a bit on it. If the jam sets immediately, it is ready.
Step 4
Skim off the foam from the jam and remove the star anise with a metal spoon. Transfer the jam to hot sterilized jars and seal tightly.
