Ingredients
- Plums - 1½ kg
- Sugar - 10.6 oz
- Butter - 2.6 oz
- Chicken Egg - 1 piece
- 20% Sour Cream - 3.4 oz
- Vegetable Oil - 2 fl oz
- Salt - 0 oz
- Wheat Flour - 6.2 oz
- Baking Powder - 0.2 oz
- Milk - 3 fl oz
Step by Step guide
Step 1
Prepare the dough. Beat one egg with 150 grams of sugar until you achieve a pale, homogeneous mixture.
Step 2
Add sour cream and milk, and continue whisking.
Step 3
Add the vegetable oil and melted butter to the mixture. Whisk everything together until smooth.
Step 4
Combine the flour, baking powder, and salt, then add to the dough.
Step 5
Line a 24 cm (9.5 inch) round baking dish with parchment paper.
Step 6
Pour the batter into the mold and gently spread it evenly across the bottom. Place it in the freezer for 30 minutes.
Step 7
While the dough is chilling, cut the plums in half and remove the pits.
Step 8
In a skillet over medium heat, melt 150 grams of sugar.
Step 9
Place the plums cut side down onto the melted sugar, caramelize for 1.5 minutes, then flip the plums and caramelize for another 1.5 to 2 minutes.
Step 10
After 30 minutes, place the caramelized plums on top of the frozen dough. Some of them will sink into the sponge cake, while others will remain on top like a glaze.
Step 11
Bake the pie for 45 minutes at 329°F. Let the finished plum pie cool slightly before serving.
