Polish Apple Pie
Ingredients
- Butter - 7.1 oz
- Chicken Egg - 4 pieces
- Wheat Flour - 7.1 oz
- Baking Powder - 1 tablespoon
- Apple - 2 lbs
- Sugar - 9.9 oz
- Meyer Lemon Juice - 0 fl oz
- Citrus Zest Mix - 1 tablespoon
- Powdered Sugar - to taste
Step by Step guide
Step 1
Separate the egg whites from the yolks. Whisk the yolks with softened butter.
Step 2
Sift the flour and baking powder, then add to the butter and egg yolks. Knead into a stiff dough.
Step 3
Divide the dough into two parts — one third and two thirds. Shape each part into a ball and cover with plastic wrap. Place the smaller dough ball in the freezer and the larger one in the refrigerator for 1 hour.
Step 4
Peel the apples: remove the skin and seeds. Grate the apples using a medium grater.
Step 5
Place the apples in a pot, add lemon juice and 100 grams of sugar. Simmer over medium heat for 15 minutes or until the liquid evaporates.
Step 6
Grate the lemon zest, add it to the apples, mix well, and cool to room temperature.
Step 7
Remove the dough from the refrigerator, roll it out with a rolling pin, and place it into a round pie dish, pressing it into the bottom and creating a border about one centimeter high. Line the bottom of the dish with parchment paper beforehand.
Step 8
Whip the egg whites until stiff peaks form, then gradually add the sugar while continuing to beat the egg whites. Continue whipping until the sugar dissolves and the mixture becomes bright white and glossy.
Step 9
Place the apples on the dough in the pan. Grate half of the frozen dough on top.
Step 10
Spread the egg white mixture on top. On the egg whites, add the second half of the grated dough. Place in an oven preheated to 374°F for 45 minutes.
Step 11
After 45 minutes, turn off the oven. Open it and leave the pie inside for 30 minutes. Allow the pie to cool completely, dust with powdered sugar, and serve.
