Ingredients

  • Wheat Flour - 4.2 oz
  • Milk - 8 fl oz
  • Farm fresh eggs - 2 pieces
  • Butter - 0.5 oz

Step by Step guide

Step 1

Whisk the eggs and salt in the milk.

Step 2

Add a tablespoon of melted butter, the flour, and mix to form a liquid batter. Let it rest for half an hour to release excess air.

Step 3

Pour the batter into a muffin tin or separate molds (both silicone and metal can be used) to about 2/3 full. Be sure to grease the metal molds with butter beforehand.

Step 4

Attention! Now for the baking process that must be followed. Preheat the oven to 392°F (392 degrees Fahrenheit) and bake for 15 minutes without opening the door. During this time, the popovers will rise due to the steam released by the batter.

Step 5

After 15 minutes, take a peek to see the magic that has happened, then reduce the temperature to 356°F (356 degrees Fahrenheit) and bake for another 15–20 minutes until golden brown. The popovers easily come out of the mold, literally jumping out, which is why they are called 'jumpers.' Poke them in one spot with the tip of a knife to let the hot air escape.

Step 6

Now, while they are hot, we will cover them with glaze or a spiced sprinkle.

Step 7

For the sprinkle: mix sugar (100 g) with lemon or orange zest (15 g), cinnamon (2 g), and clove (1 g). Grind the clove in a spice grinder. Regular sugar can be used, not necessarily brown sugar, which is more commonly used by American homemakers.

Step 8

For the chocolate glaze: melt 1 chocolate bar (you can use one with chopped nuts) + add a little milk as needed, wait until it thickens slightly, and use a pastry brush to cover all the popovers.
