Ingredients

  • 3.2% Milk - 5 fl oz
  • Dry yeast - 0.7 oz
  • Sugar - 15.9 oz
  • Wheat Flour - 21.2 oz
  • Chicken Egg - 8 pieces
  • Butter - 8.8 oz
  • Poppy seed paste - 21.2 oz
  • Almond - 7.1 oz
  • Salt - 0.7 oz

Step by Step guide

Step 1

Heat 170 ml of 3.2% fat milk to 64°F.

Step 10

After that, you can brush the items with egg and bake for 20 minutes at a temperature of 170-356°F.

Add 20 grams of yeast to warm milk (use less for a sponge dough) and stir until dissolved.

Step 3

Add 10 grams of sugar to the mixture of milk and yeast, then transfer it to the mixing bowl if you are using a mixer to knead the dough. During the kneading process, add another 40 grams of sugar.

Step 4

Next, add 600 grams of flour and 3 eggs. Then, add 150 grams of softened butter with a fat content of 82.5%. Finally, add 20 grams of salt.

Step 5

Knead the dough in a mixer on low speed for 20 minutes. If you are working by hand, the first kneading should be done for five minutes.

Step 6

After the first kneading, let the dough rest for 20 minutes at room temperature under a towel to rise. Then knead it again thoroughly and let it rest for another 20 minutes. After that, knead it a third time.

Step 7

Prepare the filling: mix the poppy seeds with 400 grams of sugar and cook for 6 hours. Then pass it through a meat grinder three times.

Step 8

Add almond flour, 4 eggs, and 100 grams of butter to the mixture. Mix everything together. The filling is ready.

Step 9

Roll out the dough, fill the pie with the filling, and then let it rest for about 20 minutes.
