Poppy Seed Pie with Almond Powder

Ingredients

  • Wheat Flour - 7.1 oz
  • Salt - a pinch
  • Water - 0 fl oz
  • Chicken Egg - 1 piece
  • Raisins - 1.1 oz
  • Rum - 2 tablespoons
  • Butter - 3.5 oz
  • Poppy seed paste - 14.1 oz
  • Sugar - 0.7 oz
  • Almond - 0.7 oz
  • Vanilla salt - 0.5 oz
  • Whole egg - 1 piece
  • Egg white - 2 pieces

Step by Step guide

Step 1

For the dough (400 grams) – I mixed 200 grams of flour with 20 grams of sugar and 2 pinches of salt, added 100 grams of softened butter, and rubbed it with the flour; I formed a mound from the flour and cracked one egg on top. Then I added 20 ml of cold water.

Step 2

I kneaded the dough by hand.

Step 3

I rolled it into a ball and placed it in the refrigerator for 30 minutes.

Step 4

I divided it into two parts and rolled it out to a thickness of no more than 1 cm.

Step 5

For the poppy seed filling, I soaked 30 grams of raisins in 2 tablespoons of rum; I melted 50 grams of butter.

Step 6

I mixed 400 grams of poppy seeds (previously ground in a blender) with 200 grams of sugar, 20 grams of almond powder, and 1 packet of vanilla sugar.

Step 7

Then I added the butter, raisins, and mixed everything well until smooth; I whipped 2 egg whites in a separate bowl and added them to the poppy seed mixture.

Step 8

I placed one rolled-out layer of dough on the bottom of the mold, spread the entire filling on top, leveled it, and placed the second layer on top, brushed it with egg yolk, and put it in the oven for 35 minutes at 374°F.
