Pork Blood Ice Cream
Ingredients
- Sugar - 5.3 oz
- Cocoa Powder - 1.1 oz
- Corn Starch - 0.7 oz
- Grated Ginger Root - ½ spoons
- Ocean salt - a pinch
- Milk - 8 fl oz
- Pork Blood - 4 fl oz
- Oranges - 1 piece
- Orange bitters - 2 spoons
Step by Step guide
Step 1
Strain the pig's blood (it should be as fresh as possible) through a fine sieve. Mix together the sugar, cocoa, and starch, then add the ginger and salt. Gradually pour in the milk while stirring. Pour in the blood and mix well.
Step 2
Pour the mixture into a saucepan and place it over medium heat. Cook while stirring constantly: the mixture should thicken and turn a chocolate color.
Step 3
Remove from heat, stir in the orange zest and liqueur. Pour into a bowl, cover with plastic wrap, and let cool. Refrigerate overnight, then transfer to an ice cream maker and churn until ready.
