Ingredients
- Pork tenderloin - 2 lbs
- Lemon-Pepper Mix - 2 teaspoons
- Salt - 1 teaspoon
- Garlic - 1 head
- Bay leaf - 2 pieces
- Ground coriander - to taste
- Allspice berries - 6 pieces

Prepare the necessary ingredients.
Step 2
In a separate bowl, combine 1 teaspoon of salt, 2 teaspoons of ground pepper mix, and ground coriander to taste.
Step 3
Mix the spices well.
Step 4
Peel the garlic, wash it thoroughly, and press it through a garlic press.
Step 5
Wash the meat well under running water and pat it dry.
Step 6
Make a shallow cut along the piece — about 1 cm deep.
Step 7
Cut the meat, spiraling inward towards the center of the piece.
Step 8
The piece should remain whole, about 1 cm wide.
Step 9
Cut the piece into two equal halves.
Step 10
Pound each piece on both sides, covering it with plastic wrap.

Rub the prepared meat with garlic and sprinkle with the prepared spices and salt.

Roll the meat into a loaf. Secure it tightly with string so it doesn't unravel during baking. Place it in a baking dish. Add 50 ml of clean water and place the bay leaves and allspice on the bottom. Let it marinate for 30 minutes at room temperature.

Cover the baking dish with a lid or foil, and bake in a preheated oven at 356°F for about 1 hour.

Cool the loaf under a closed lid to keep it juicy. Remove the strings used to tie the loaf. Serve warm or cold.
