Ingredients

  • Lard - 5 oz
  • Wheat Flour - 5 oz
  • Water - 0 fl oz
  • Pork Blood - 5 oz
  • Smoked salt - 1 teaspoon
  • Ground Black Pepper - ½ teaspoon
  • Salt - 1 teaspoon
  • Vegetable Oil - to taste

Step by Step guide

Step 1

Mix lard with flour and salt (0.5 teaspoon). Stir until the mixture is homogeneous.

Step 2

Add water and knead the dough well.

Step 3

Separate 2/3 of the dough, roll it out, and form the bottom and sides of the pie in a baking dish. If the dough sticks to your hands, wet them with water. The remaining 1/3 of the dough will be used for the pie lid.

Step 4

Cut the pork into thin pieces and sauté with a small amount of vegetable oil and spices: salt, ground black pepper, and smoked paprika.

Step 5

Place the pork in the dough base.

Step 6

From the remaining 1/3 of the dough, make a lid for the pie: roll it out to the size of the dish, place it on the pie, and carefully pinch the lid to the base all around the perimeter. If there is excess dough hanging, trim it.

Step 7

Make a small cross-shaped cut in the center of the lid to allow steam to escape from the pie.

Step 8

Bake the pie in an oven preheated to 390°F for 45–50 minutes.

Step 9

It is best to serve the pie with a side of fresh vegetable slices or pickled cucumbers and tomatoes.
