Ingredients
- Sugar - 2.5 oz
- 10% cream - 12 fl oz
- Butter - 3.5 oz
- Water - 5 tablespoons
- Powdered Sugar - 1.8 oz
- Vanilla Pod - 1 piece
- Cinnamon - 1 teaspoon
- Wheat Flour - 8.8 oz
- Whole egg - 4 pieces
Step by Step guide
Step 1
Chop the cold butter with a knife together with 200 g of flour until crumbly, add water and knead the dough. Roll the dough into a log, divide it into 10 pieces. Roll each piece out and place it in a mold. Refrigerate for 30 minutes.
Step 2
Separate the yolks from the whites. Mix the yolks with powdered sugar and 50 g of flour.
Step 3
In a saucepan, bring the cream with sugar and vanilla to a boil. Gradually start adding the cream to the yolks while whisking. Return everything to the saucepan and heat until thickened over low heat, stirring constantly.
Step 4
Remove the dough. Pour the cream into the molds with the dough (do not fill completely, the cream will rise). Bake at 482°F for 15–20 minutes.
Step 5
When the pastries are ready, sprinkle with cinnamon. Serve the dessert cooled.
