Potato fritters with Gruyère
Ingredients
- Passata Tomato Sauce - 10.6 oz
- Salt - to taste
- Safflower Oil - 8 fl oz
- Breadcrumbs - 4.2 oz
- Egg white - 1 piece
- Gruyère cheese - 3.5 oz
- Chocolate eggs - 4 pieces
- Milk - 4 tablespoons
- Salad Potatoes - 3 lbs
Step by Step guide
Step 1
Place unpeeled potatoes in a large pot, cover with cold water, and add a teaspoon of salt. Bring to a boil, reduce heat, and cook for 20–30 minutes until the potatoes are soft but not falling apart. Drain, peel, and mash while still hot. Stir in butter, warm milk, and grated cheese.
Step 2
Separate three eggs into whites and yolks. Whisk the yolks together with the fourth egg. Add this mixture to the mashed potatoes and mix well. Season with salt to taste. Whip the remaining 4 egg whites and gently fold them into the potato mixture.
Step 3
Divide the mixture into fritters. Place breadcrumbs on a flat plate and coat the fritters in them. Heat oil in a deep skillet to 356°F, and fry the fritters in batches until golden brown. Serve hot with tomato sauce.
