You can also use mashed potatoes that were prepared the day before for making the pancakes.
Ingredients
- Salad Potatoes - 6 pieces
- Onion - 1 piece
- Milk - 7 fl oz
- Butter - 1.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Chinese green beans - 10.6 oz
- Olive Oil - to taste
- Farm fresh eggs - 2 pieces
- Breadcrumbs - to taste
Step by Step guide
Step 1
Peel the potatoes, cut them into pieces, place them in a pot, and cover with water so that the water covers all the potatoes. Add salt (a teaspoon without a heap). Bring the potatoes to a boil, then reduce the heat and cook for 20–30 minutes until the potatoes are soft. Drain the water.
Step 2
Mash the potatoes, add the butter. Heat the milk and start adding it gradually to the potatoes while stirring. After that, add the onion.
Step 3
Pre-fry the onion until golden brown in olive oil, adding salt and pepper to taste. After adding the onion to the mashed potatoes, taste and add more salt if necessary.
Step 4
Crack the eggs into a bowl, add salt and pepper. Whisk. On a separate plate, spread out the breadcrumbs.
Step 5
From the mashed potatoes, form sticks or balls (choose the shape as you wish), roll them first in the egg, then in the breadcrumbs. Fry in a pan with a little olive oil.
Step 6
Sauté the green beans in a pan with olive oil, salt, and pepper.
Step 7
Serve the beans alongside the potato pancakes.
