Description
A twist on bruschetta in a Russian style — a blend of cod liver, onions, and boiled eggs is lightened by the addition of pickles to reduce the liver's excess smoothness and soften the taste of fish oil. A cheesy topping serves mainly as decoration, as the liver itself doesn't look particularly appealing; it's tempting to dress it up and make it more attractive. And instead of toast, potato pancakes are a perfect match for the fish. The only important condition is not to forget to blot the potato pancakes with a paper towel to absorb the excess oil, and serve them immediately with the liver melting on the hot surface of the pancakes.
Ingredients
- Potato - 2 lbs
- Chicken Egg - 2 pieces
- Onion - 2 heads
- Glutinous Rice Flour - 0.7 oz
- Vegetable Oil - 1 fl oz
- Cod Liver - 7.1 oz
- Pickled Cauliflower - 3.5 oz
- Scallions - to taste
- Cheese Spread - 3.5 oz
- Sour Cream - 4.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide

Prepare all the ingredients.

Top the potato pancakes with cod liver, then add pickled cucumbers.

Finely chop the green onions, reserving a few sprigs for garnish. Mix them with sour cream and grated cheese. Also, spoon this mixture over the potato pancakes.
